Shrimp And Wild Rice Salad Recipe

Ingredients

 
2 tablespoons butter or margarine
 
1/2 pound mushrooms, sliced
 
2 cups water
 
1 cup wild rice
 
1/2 teaspoon chicken-flavor instant bouillon
 
1 pound small shrimp
 
3 tablespoons salad oil
 
2 green onions, cut into 1-inch pieces
 
1/3 cup mayonnaise
 
2 tablespoons milk
 
1/2 teaspoon salt
 
1 small head Boston lettuce
 
1 medium-sized avocado
 
1/4 cup pine nuts toasted

Directions

1. In 2-quart saucepan over medium-high heat, in hot butter or margarine, cook mushrooms, stirring frequently, until tender and lightly browned, about 5 minutes.
2. To mushrooms in saucepan, add water, wild rice, and bouillon; over high heat, heat to boiling. Reduce heat to low; cover and simmer 45 minutes or until rice is tender and liquid is absorbed.
3. Meanwhile, shell and devein shrimp; set aside. In 12-inch skillet over medium heat, in hot salad oil, cook green onions until lightly browned. With slotted spoon, remove green onions from skillet; discard. Increase heat to high; add shrimp and cook, stirring quickly and constantly, until shrimp turn pink, about 2 minutes. Remove skillet from heat.
4. Into shrimp, with rubber spatula, stir wild-rice mixture, mayonnaise, milk, and salt until mixed.
