Shrimp And Vegetables Mandarin Recipe
Shrimp And Vegetables Mandarin always bring back wonderful memories from childhood. This tasty shrimp is my mothers favorite dish and first choice for a seafood dish. I can still remeber the aroma of this Shrimp And Vegetables Mandarin that often lured the rest of us into the kitchen!!! Try it!
Ingredients
Water
1 can (11 oz.) mandarin oranges, drained (reserve liquid)
2 envelopes ( 1/4 oz. ea.) instant chicken broth
1 1/2 tablespoons cornstarch
1/8 teaspoon garlic powder
1 pound medium shrimp, shelled and cleaned
1 bunch green onions, thinly sliced
1 package (6 oz.) frozen pea pods, defrosted
1 jar (4 1/2 oz.) sliced mushrooms, drained
Slivered almonds
Directions
Add enough water to reserved syrup to equal 1 1/2 cups.
In 2-quart casserole, combine syrup mixture, broth, cornstarch and garlic.
Cook at HIGH 3 1/2 to 4 1/2 minutes, or until mixture is thickened; stir twice.
Stir in shrimp, onions, pea pods and mushrooms.
Cook, covered with lid, at HIGH 2 minutes and at MEDIUM 5 to 6 minutes, or until shrimp is tender; stir once.
Stir in oranges and almonds.
Let stand, covered, 5 minutes before serving.
