1/4 pound fresh snow peas, strings removed
2 cups (6 ounces) medium pasta shells
1 cup DANNON® Plain Nonfat or Lowfat Yogurt
1 tablespoon red wine vinegar
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano leaves, crushed
1 pound fully cooked medium shrimp, peeled and deveined
6 cherry tomatoes, halved
1/2 cup red bell pepper strips
1/4 cup sliced green onions Large lettuce leaves
How to make Shrimp And Snow Pea Salad
In a large saucepan bring water to a boil.
Add snow peas and boil 1 to 2 minutes or until tender-crisp.
Remove from saucepan with slotted spoon; place in ice water to cool quickly.
Drain.
Add pasta to boiling water; stir well and return to a boil.
Reduce heat to medium-high and simmer 10 to 12 minutes, stirring often; drain.
Rinse in cold water and drain again.
In a large bowl combine yogurt, vinegar, garlic, salt, pepper and oregano; stir well.
Add shrimp, snow peas, pasta, cherry tomatoes, bell pepper and green onions.
Toss gendy.
