Ingredients

 
1/2 pound small shrimp, cooked and shelled
 
2 1/2 cups cooked rice
 
1 tablespoon finely chopped parsley
 
2 large tomatoes, peeled, seeded and cubed
 
4 tablespoons oil
 
2 tablespoons lemon juice
 
1 teaspoon prepared (Dijon type) mustard
 
2 teaspoons finely chopped onion
 
1/2 teaspoon salt
 
Freshly ground black pepper
 
2 hard boiled eggs, shelled
 
1/2 cucumber, thinly sliced

Directions

Combine the shrimp, rice, parsley and tomatoes in a large bowl.
Prepare a salad dressing with the oil, lemon juice, mustard, onion, salt and pepper.
Pour the dressing over the shrimp mixture and toss gently.
Let the salad rest 15 minutes.
Mix well and transfer to a glass bowl or attractive serving dish.
Cut the eggs into wedges and garnish the salad with the eggs and cucumber slices.
