Shrimp and Egg Sandwiches Recipe
Ingredients
| Frozen shrimp | 1 Pound | |
| Eggs | 4 standard | |
| Oil | 1/4 Cup (16 tbs) | |
| Onion | 1 Small, chopped | |
| Salt | 1/2 Teaspoon | |
| Paprika pepper | 2 Teaspoon | |
| Bread slice | 4 | |
| Butter/Margarine | 2 Tablespoon | |
| Lettuce leaves | 4 | |
| Tomatoes | 2 , quartered |
Directions
MAKING
1. Hard boil two eggs; cool, shell and cut into wedges
2. If using frozen shrimp, allow to thaw
3. In a frying pan, heat oil and fry onions for five minutes; push them to one side
4. Add shrimp to the pan and cook for a couple of minutes; remove from the pan and keep warm
5. In a bowl, beat the rest pf the eggs with salt and paprika; add it to the pan along with onions amd lightly scramble it
6. Toast the bread, spread with butter and place each slice on four warmed plates
7. Place a leaf of lettuce on each and spoon over some scrambled egg
8. Spoon some shrimp on top
SERVING
9. Garnish with hard boiled egg adn wuarters of tomatoes and serve warm
