Ingredients

 PASTRY
 All purpose flour1 1/2 Cup (16 tbs)
 Salt1 Pinch
 Butter1/4 Pound
 Cheese1/2 Cup (16 tbs), grated
 Cold water3 Tablespoon
 Chopped1/2 Cup (16 tbs) (FILLING)
 Cheddar1 Cup (16 tbs), grated (FILLING)
 1 tbsp (15 mL) chopped leek
 Eggs4 standard (FILLING)
 Cream1/2 Cup (16 tbs) (FILLING)
 Milk1/2 Cup (16 tbs) (FILLING)
 Pinch dry mustard
 Grated rind of 1 lemon
 Salt To Taste
 Pepper To Taste

Directions

Preheat oven to 375°F (190°C).
Sift flour and salt into a bowl.
Rub in butter till mixture resembles breadcrumbs.
Mix in cheese and sufficient water to form a soft dough.
Knead lightly on floured board.
Roll out thinly and cut into 24 x 2 1/2 inch (6 cm) rounds to fit tart tins.
Press pastry gently into base of tins.
Place small amount of chopped shrimp in bottom of pastry.
Top with portion each of cheese and leek.
Blend together eggs, cream, milk, mustard, lemon rind, salt and pepper.
Spoon egg mixture over shrimp and cheese.
Bake pies at 375°F (190°C) for 15-20 minutes or until golden and puffy.
