Shredded Beef Heart Recipe

Ingredients
1 lb beef or veal heart
2 tablespoons soy sauce
2 tablespoons sherry
1 teaspoon brown sugar
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water
1/4 cup oil or melted lard
2 scallions small pieces fresh ginger or 1 teaspoon ground ginger
Directions
Trim the heart, removing all the tubes and blood vessels.
Cut the flesh into very fine shreds and soak in cold water for 30 minutes.
Drain.
Add the soy sauce, sherry, sugar and salt to the heart, mix well.
Mix the cornflour (cornstarch) to a smooth paste with the water, add to the heart, and mix well.
Heat the oil or lard and fry the heart over fierce heat for 4-5 minutes, stirring all the time until browned.
Chop the spring onions (scallions) and ginger, if fresh; add both to the beef and mix well.
