Shredded Courgettes with Golden Garlic Recipe
Ingredients
| Pasta | 500 Gram, dried | |
| Extra virgin olive oil | 6 Tablespoon | |
| Garlic | 6 Clove (5gm), finley sliced | |
| Courgettes | 4 Medium, grated | |
| Salt, black pepper | ||
| Grated parmesan | 8 Tablespoon | |
Directions
Cook pasta in a large pot of boiling, salted water, until firm to the bite.
While pasta is cooking, heat oil in a large frying pan.
Add garlic and cook over high heat until just golden, 2 minutes.
Add courgettes and cook, stirring constantly, until soft, 5 minutes.
Add salt and pepper to taste.
Drain pasta, reserving 1/2 cup pasta water.
Add drained pasta with parmesan to the hot courgettes.
Toss well to coat, adding reserved water as needed.
Serve immediately with additional parmesan.
