Shoulder Of Lamb With Raisin And Apricot Stuffing Recipe
Ingredients
| 1 onion, peeled and chopped | ||
| Butter | 15 Gram | |
| Apricots | 219 Gram | |
| White breadcrumbs | 50 Gram | |
| 2 x 18 ml spoons finely chopped parsley | ||
| Raisins | 50 Gram | |
| Salt | 1/2 Teaspoon | |
| black pepper | 1 | |
| Egg | 1 , beaten | |
| Small boned shoulder of lamb | ||
| Dripping | ||
Directions
MAKING
1.Take a small pan, heat butter in it.
2.Saute onions until golden brown.
3.Strain and chop apricots after keeping the juice aside.
4.Combine onions with apricots, breadcrumbs, parsley, raisins and seasoning.
5.Bring the mixture together with whisked eggs.
6.Place the mixture in roasting tin and bake for 1 1/2 hours - 2 hours until soft.
SERVING
7.Serve warm.
