Shortcake Recipe

This recipe is ideal for people on a Diabetic regimen. You don't have to be a gourmet to judge how mouth-watering and tasty this dish really is.

Ingredients

 
1 3/4 cup flour
 
1 tsp sugar
 
3 pkts. Concentrated acesulfame-K
 
2 tsp baking powder
 
1/2 tsp baking soda
 
Dash salt (optional)
 
3 tsp margarine or butter
 
5/8 cup nonfat milk or nonfat buttermilk

Directions

Combine the flour, sugar, acesulfame-K, baking powder, baking soda, and salt.
Cut in the margarine.
Using a food processor makes this very quick and easy.
Then add the milk and process, or use your hands to gather the dough into a ball.
Put the dough on a lightly floured surface.
Work it briefly into a ball and then flatten it.
Use a rolling pin to flatten it out; the dough should be about 3/4 in. (1.75 cm) thick.
Use a round biscuit cutter to cut out 10 circles.
Place the biscuits on a baking sheet.
Bake in a preheated 450°F (230°C) oven for 8-9 minutes, until lightly brown.
