Shoofly Pie Recipe

Ingredients

 
1 egg, lightly beaten
 
1/2 teaspoon all-purpose flour
 
1/2 teaspoon baking soda
 
1/2 cup cold water
 
1 cup unsulfured or light molasses
 
1 1/2 cups all-purpose flour
 
1/2 cup light brown sugar, firmly packed
 
5 tablespoons butter
 
1/2 cup boiling water
 
1 9-inch unbaked Basic Pastry Shell

Directions

Preheat oven to 350 degrees.
Place egg, 1/2 teaspoon flour, baking soda, cold water, and 1/2 cup molasses in a bowl and stir to blend well.
Set aside.
Work together the 1/2 cups flour, brown sugar, and butter, using a pastry blender, fork, or your fingers until mixture is fine, light, and crumbly in texture.
Remove 1 1/4 cups crumbs and set aside to be used as a topping.
To the remaining crumbs in the bowl, add 1/2 cup molasses mixed with boiling water.
Stir well with a whisk or fork, then add in the cold molasses mixture.
Mixture will be thin.
Pour the combined filling into the unbaked pie shell.
Sprinkle evenly with reserved crumbs.
Bake 45 to 60 minutes, or until center of pie has firmed up.
