Shish Kebabs Recipe

Ingredients
2 lb lamb leg steak cut 1-inch thick
12 button onions or 6 medium onions
1 green capsicum
1 red capsicum
3-4 bay leaves broken in large pieces (optional) salt
MARINADE:
3 tablespoons salad oil
3 tablespoons wine vinegar or lemon juice
2 cloves garlic, crushed
2 tablespoons grated onion or finely chopped spring onion
1 crumbled bay leaf
Freshly ground black pepper
Directions
Trim excess fat from lamb and cut into 1-inch cubes.
Parboil onions, cutting larger ones in half lengthways.
Wash and remove stem and seeds from peppers and cut into 1-inch squares.
Mix marin ade ingredients in a bowl and add lamb pieces.
Allow to marinate for 1 hour, turning meat occasionally.
To prepare kebabs, thread onto 4-6 skewers alternatively, lamb pieces, onions, green and red capsicums and bay leaves..
Brush with marinade and barbecue over glowing coals for 4-6 minutes, turn and brush with marinade during cooking.
Serve immediately.
