4 ounces fresh shiitake mushrooms
 
1 Tablespoon olive oil
 
1 medium onion, chopped fine
 
1/2 teaspoon salt
 
2 cups vegetable broth
 
1 Tablespoon soy sauce
 
1/2 teaspoon ground ginger
 
1/2 teaspoon ground savory
 
1 Tablespoon cornstarch
 
1/4 cup cold water

Directions

Wipe clean, remove stems and slice.
Heat a skillet and saute over medium high heat: After 5 minutes, add the mushroom slices (use stems in stock pot) and saute 5 minutes more.
Reduce heat to low and add.
Cover pan and simmer 15 minutes.
