Sherry Delight Recipe

Ingredients
1 1/2 pounds haddock fish fillets
1/4 cup flour
1/4 cup oil
1/2 teaspoon sugar
1/2 teaspoon ginger
1/4 teaspoon garlic powder
1 tablespoon soy sauce
1 tablespoon sherry
Water
1/2 teaspoon freshly ground black pepper
1/4 cup chives or ends of spring onions
1 tablespoon parsley
2 medium-size tomatoes, chopped
1 teaspoon cornstarch
Salt to taste
1/2 cup water or sherry
Directions
Spices and wine blend here to make a sauce supreme.
If you prefer, substitute sherry for the last 1/2 cup of water.
Coat fillets with flour.
Heat oil in skillet, brown fish on both sides.
Combine sugar, ginger, garlic, soy sauce, sherry, and water to make 1 cup.
Pour over fish.
Cover skillet, simmer for 10 minutes.
Add black pepper, chives, parsley, and tomatoes.
Cook uncovered for 5 minutes.
Mix together cornstarch, salt, and 1/2 cup water or sherry.
Blend well, add to fish.
Simmer uncovered 5 minutes more.
Sauce will thicken slightly and smell heavenly.
