Sherried Sweets Recipe

Ingredients
6 medium size sweet potatoes
4 tablespoons butter or margarine
1/2 cup brown sugar
2/3 cup orange juice
1/2 teaspoon grated orange peel
1/3 cup sherry
1 cup pecans, coarsely chopped
Directions
Rinse and dry potatoes, pierce each one several times with a fork.
Place potatoes in a cooking bag with open end folded under, or on a layer of paper towels, in the Radarange oven.
Cook 10 to 12 minutes, depending on the size of the potatoes.
Turn them over halfway through cooking time.
Cook until they are firm but almost tender.
Peel and cut in 1 inch thick slices.
Melt butter in 10 inch ceramic skillet in oven 45 seconds.
Add potato slices.
Cook 1 minute; stir to coat; cook 1 minute more.
Mix together remaining ingredients; pour over slices.
Mix gently so slices are coated but unbroken.
Cover, cook in oven 10 minutes, turn dish halfway around at end of 5 minutes.
