 Mushrooms1/2 Cup (16 tbs), minced
 1 tablespoon minced green onion
 Butter3 Tablespoon
 1 cup small whole cooked and shelled shrimp
 Flour1 1/2 Tablespoon
 Light cream3/4 Cup (16 tbs)
 Sherry1/4 Cup (16 tbs)
 2 three-egg omelets

Directions

Simmer mushrooms and onion in butter until mushrooms are cooked.
Add shrimp.
Stir in flour.
Gradually add cream, and cook until thickened.
Blend in sherry.
Fill each omelet with 2 tablespoons of the shrimp mixture.
