Sherried Pan Gravy Recipe
Ingredients
2 tablespoons reserved pan juices
2 tablespoons all-purpose flour
2 cups chicken broth or stock
4 tablespoons dry sherry
Directions
After removing hens, place roasting pan containing reserved pan juices over medium heat; add flour to pan and cook 2 minutes, stirring and scraping bottom to incorporate browned bits.
Stir in chicken broth and sherry; simmer, stirring constantly, 2 minutes longer.
Strain gravy into sauceboat.
