Ingredients

 
1 qt. oysters
 
1 tablespoon butter
 
1 thin slice bacon for each oyster
 
3 or 4 dashes of Tabasco Sauce
 
3 oz. sherry
 
3 teaspoons Worcestershire sauce

Directions

Select the oysters the larger, fatter, and fresher the better either the night before or the morning of your party.
Wrap each oyster separately in a thin bacon slice.
Secure with a toothpick through bacon and oyster. (Do not use colored toothpicks as the dye will come off.)
If the wrapping is done the night before or on the morning of the party, store the oysters in the refrigerator in a glass dish.
Place the oysters in a large pan as close together as possible, even crowding them, because they will shrivel when the heat strikes them.
Pour the sherry over the oysters, and dice the butter over them.
Shake a little Tabasco sauce over the pan, and sprinkle a few drops of Worcestershire sauce over each oyster.
Place the pan of oysters under a broiler with a moderate flame and cook, turning the oysters occasionally, until the bacon is slightly crisp.
If the oysters are not uniform in size, some will brown before others, so watch the broiling process carefully.
The broiling should take no longer than 7 to 10 minutes.
