Sherried Meatball Casserole Recipe

Ingredients
6 slices bacon
1/2 cup onion
2 cloves garlic, minced
1/3 cup fine breadcrumbs
1 egg
1 1/2 teaspoons salt
1 1/2 pounds ground beef chuck
1 can (3 ounces) sliced mushrooms and liquid
1 can (10 3/4 ounces) cream of mushroom soup
1 cup dry sherry
Directions
Cook bacon until crisp in skillet.
Remove bacon and all but 2 tablespoons of the bacon fat.
Reserve remainder.
Add onion and garlic to the 2 tablespoons bacon fat remaining in the skillet and cook until tender but not browned.
Add with crumbs, egg and salt to ground beef and mix lightly.
Form into 12 meatballs.
If necessary, add some of reserved bacon fat to skillet and brown meatballs.
Transfer to buttered 2-quart casserole.
Mix mushrooms, soup and sherry and pour over meatballs.
Crumble bacon and sprinkle on top of casserole.
Bake in a 375° F.oven for 45 to 50 minutes.
This casserole may be prepared in advance, refrigerated and baked at serving time.
Add 15 minutes to baking time.
