Ingredients

 
1/3 cup sugar
 
2 tablespoons cornstarch
 
1/8 teaspoon salt
 
2 cups milk
 
1/4 cup cream sherry or apple juice
 
2 egg yolks, lightly beaten
 
2 tablespoons butter or margarine
 
1 teaspoon vanilla
 
About 1 1/2 cups seedless red or green grapes, diced fresh pineapple, or sliced nectarines

Directions

In a 2 quart pan, stir together sugar, cornstarch, and salt.
Gradually add milk and sherry until well blended.
Set mixture over medium heat and cook, stirring constantly, until it boils; boil for 1 minute.
Remove from heat.
Stir part of the hot sauce into beaten yolks, then return all to pan and cook for 30 seconds.
Remove from heat and stir in butter and vanilla until butter is melted.
Layer spoonfuls of pudding and fruit in 4 stemmed glasses.
If you use nectarines, be sure you end top layer with pudding so fruit will not darken.
Chill until ready to serve.
