Ingredients

 Red or green lettuce-3/4 pound
 Dijon Mustard1 1/2 Teaspoon
 Mayonnaise1 Teaspoon
 Olive oil -1/4 cup, good quality
 Red wine vinegar -2 scant, tablespoons
 Dried basil-1/4 teaspoon or Fresh- 1 teaspoon, chopped
 Dried tarragon leaves-1/2 teaspoon or Fresh -1 1/2 teaspoons ,chopped
 Salt1 To taste
 Ground black pepper1 To taste
 Garlic1 Clove (5gm)

Directions

MAKING
1)After washing greens drain it and pat dry with paper towels.
2)Place in salad bowl or on individual salad plates.
3)Further beat mustard and mayonnaise.
4)Add oil in a very thin stream, beating constantly with wire whisk.
5)Dressing should remain thick.
6)Beat in vinegar in thin stream.
7)Dressing should be thinner but still creamy.
8)Add fresh chopped herbs along with salt and pepper.
9)Put garlic through press and beat in.
SERVING
10)Serve on the salad.
