Ingredients
| Red or green lettuce-3/4 pound | ||
| Dijon Mustard | 1 1/2 Teaspoon | |
| Mayonnaise | 1 Teaspoon | |
| Olive oil -1/4 cup, good quality | ||
| Red wine vinegar -2 scant, tablespoons | ||
| Dried basil-1/4 teaspoon or Fresh- 1 teaspoon, chopped | ||
| Dried tarragon leaves-1/2 teaspoon or Fresh -1 1/2 teaspoons ,chopped | ||
| Salt | 1 To taste | |
| Ground black pepper | 1 To taste | |
| Garlic | 1 Clove (5gm) | |
Directions
MAKING
1)After washing greens drain it and pat dry with paper towels.
2)Place in salad bowl or on individual salad plates.
3)Further beat mustard and mayonnaise.
4)Add oil in a very thin stream, beating constantly with wire whisk.
5)Dressing should remain thick.
6)Beat in vinegar in thin stream.
7)Dressing should be thinner but still creamy.
8)Add fresh chopped herbs along with salt and pepper.
9)Put garlic through press and beat in.
SERVING
10)Serve on the salad.
