Directions

1. Preheat oven 350ºF
2. Heat oil in a pan. Season meat & fry for 3 minutes. Add carrot, onion & garlic, combine. Add Worcestershire, pure & thyme, cook for 2 minutes, constantly stirring
3. Pour wine into the meat, reduce until almost evaporated; add stock & boil until the sauce thickened season wiht salt & pepper
4. Boil potatoes in salted water until tender. Drain & smash potatoes, add yolks & 2 tablespoon Parmesan season with salt & pepper
5. Place on the bottom of the baking dish the meat, top with pure & chesse. Bake 20 minutes until golden
