Ingredients

 
3/4 lb mixed shellfish (shrimp crab lobster scallops etc.)
 
1 cucumber
 
1 teaspoon very finely chopped fresh ginger
 
1 tablespoon soy sauce
 
1 tablespoon vinegar
 
1/4 cup oil
 
1 teaspoon sugar
 
Salt and pepper
 
Lettuce or chinese cabbage if available

Directions

Cut the shellfish into bite-sized pieces.
Peel the cucumber and cut into matchstick strips.
Mix together the ginger, soy sauce, vinegar, oil and sugar.
Add the shellfish and toss them all together.
Arrange a bed of lettuce leaves in a serving bowl.
Put the cucumber on top in a ring and place the shellfish inside the ring of cucumber.
Chill.
