Sheepherder Potatoes Recipe
Ingredients
8 bacon slices, minced
2 onions, chopped
4 potatoes, peeled, sliced 1/2 inch thick
Salt and pepper
Directions
Fry bacon until not quite crisp.
Add onion and saute until limp.
Pour off all but 2 tablespoons of drippings.
Center potatoes on tin foil placed in large casserole dish.
Pour bacon mixture over potatoes and season with salt and pepper.
Seal foil with small space between potatoes and foil.
Bake 1 1/2 hours at 300 degrees.
