 454 g boneless shark
 Olive oil45 Milliliter
 30 ml soya sauce
 Sherry30 Milliliter
 Garlic1 Clove (5gm), minced
 Ginger5 Milliliter, minced
 6 dried Chinese mushrooms, soaked 1 hour in warm water
 Tomato Paste30 Milliliter

Directions

Cut the shark in thin strips.
Blend 1 tsp (5 ml) of oil with the soya, sherry, garlic and ginger and pour over the shark and marinate 2 hours.
Slice the mushrooms.
Heat the remaining oil in a wok.
Quickly fry the shark undrained with the mushrooms.
Stir in the tomato paste and cook 1 minute longer.
Serve.
