Shantung Potatoes Recipe

Ingredients

 
1/2 kg. potatoes, peeled and washed
 
1 onion, chopped
 
1 tbsp. soya sauce
 
1 tbsp. vinegar
 
1 tsp. salt
 
2 dry chillies, deseeded and chopped vegetable oil

Directions

Cut potatoes into lengthwise slices, then cut the slices into long and thin strips.
Simmer potatoes in hot water for 1-2 minutes.
Drain.
Heat oil in a frying pan.
Saute chillies for a few seconds, then add the onion and saute.
Add potato strips and toss well.
Cook for a few minutes.
Add soya sauce, vinegar and salt.
Stir fry for a few minutes until done.
Drain on kitchen paper before serving.
