Shanghai Shrimp Recipe
Shanghai shrimp is a Chinese shrimp recipe. Skillet cooked with ginger and scallions, the shanghai shrimp is fruited with oranges. Prepared in chicken broth for a saucy texture, the shimp is finished with added water chestnuts. Loaded with oriental flavors, the shanghai shrimp is great with fried rice or noodles.
Ingredients
4 scallions, cut in 1-inch pieces
1 teaspoon minced ginger
2 tablespoons peanut oil
1 pound large shrimp, shelled and deveined
1 cup Chicken Broth
1 tablespoon cornstarch
1 (11-ounce) can mandarin oranges, undrained
1 (8-ounce) can Sliced Water Chestnuts, undrained
Hot cooked rice
Directions
In large skillet, over medium-high heat, cook scallions and ginger in oil for 2 to 3 minutes.
Add shrimp; cook for 3 to 4 minutes.
Blend chicken broth into cornstarch; stir into skillet with oranges and water chestnuts.
Reduce heat; simmer, covered, until slightly thickened and heated through.
