Shanghai Rice Recipe
This Shanghai Rice is one of the best Chinese rice dishes that I've ever tasted. An extremely flavorful blend of rice, vegetables and pork, it makes a sumptuous meal. Ingredients
| 1 lb. veal or pork, diced | ||
| Oil | 2 Tablespoon | |
| Celery | 3 Cup (16 tbs), chopped | |
| Onion | 1 Cup (16 tbs), minced | |
| Carrots | 1 1/2 Cup (16 tbs), sliced | |
| 1 cup salted peanuts, coarsely chopped | ||
| Pepper | 1/8 Teaspoon | |
| Shoyu | 1/4 Cup (16 tbs) | |
| Water | 1/4 Cup (16 tbs) | |
Directions
Saute meat in hot oil over medium heat.
Add rest of ingredients, cover and simmer 25 minutes.
Combine with fluffy rice: Add 1 1/2 cups rice slowly to 3 cups boiling water to which 1 tsp.
salt and 2 Tbsp.
oil have been added to prevent sticking.
Cover pan, reduce heat to simmer and cook 30 minutes or until all water is absorbed.
Toss lightly with fork before combining with meat mixture.
