Ingredients

 
250 gms. minced mutton
 
1/2 ginger
 
2 tablespoons channa dhal
 
1 teaspoon salt
 
4 garlic cloves
 
1/4 teaspoon cumin seeds
 
3 cloves
 
Dash of chilli powder
 
2 big cardamoms
 
1 green chilli
 
1 egg
 
1/2 cinnamon
 
Lemon juice

Directions

Soak the dhal in water for a hour or two.
Boil the mince and dhal in a small quantity of water, till the dhal is quite soft.
Remove from the fire.
When cool, add the spices and grind the mixture to a thick paste.
Divide into seven or eight sections and shape into flat, round kababs.
Leave for at least half an hour to dry.
Just before serving, dip each kabab in beaten egg, and fry.
Serve, garnished with finely cut onion and long green chillies.
Sprinkle with lemon juice.
As a variant, you can enclose chopped onion and green chillies in the centre of each kabab.
