Shami Kebab Recipe

The shammi kebab is an indian preparation of mince meat mutton cooked with a spicy blend of masalas. The mince meat is combined with chana daal along with onions, cinnamon and cooked. Mixed with green chilies, cardamom and coriander, the shamikebeb is shapped into little pats and roasted in teh oven with a brush of oil. they are best served as an appetizer or a side with a sprinkle of lemon juice.

Ingredients

 
250 gms. fine mutton mince
 
50 gms. chana dal
 
4-6 green chilieslfinely chopped)
 
50 gms. onionlfinely chopped)
 
1 stick cinnamon
 
4 cloves
 
1 tsp. green cardamoms(crushed)
 
A pinch of turmeric powder(optional)
 
Salt to taste
 
1 sprig coriander leaveslfinely chopped)

Directions

Wash and soak the dal for 1 hour.
Drain.
Boil the dal, cloves, cinnamon stick, salt, turmeric powder and mutton mince in a pressure cooker, till done and dry.
Grind the cooked and dry dal and mutton mince to a fine paste, without any water.
Mix in the onions, green chillies, cardamom powdrer and coriander leaves.
Mix well.
Pre heat the oven on 'convection' at 250° C .with the lightly greased metal tray, placed on the high rack.
Apply a little oil on palms, shape the mixture into small tikkis and place on the hot metal tray.
Brush with oil.
Bake at 250° C for 30:00 minutes.
Flip the kababs over halfway through cooking time and brush again with oil.
