 Shallots1/2 Pound, peeled
 Butter1 Tablespoon
 Mushrooms1/2 Pound, cleaned
 1 tbsp chopped lemon rind
 Tarragon1 Teaspoon
 Saffron1/4 Teaspoon
 Salt To Taste
 Pepper To Taste

Directions

Cook shallots 10 minutes in salted, boiling water. Remove from heat and drain well.
Heat butter in saucepan over medium heat. Add shallots and remaining ingredients. Season with salt and pepper. Cover and cook 6 minutes over low heat.
