Directions

Cream minced shallots into the butter.
Beat in parsley.
Chill until firm.
Herb Honey: Use any combination of the following herbs: mint, sage, thyme, borage or rose geranium.
Bruise herbs very slightly.
Place a layer of herbs in a small saucepan.
Cover with honey and warm over low heat for two minutes.
Pour into sterilized jars and seal tightly.
Allow honey to stand in a warm room for two weeks to mingle flavors.
Strain to remove herb leaves.
Delicious on hot biscuits or as a sweetener for tea.
