Shahi Khichdi Recipe

Ingredients
| Basmati rice | 1 Cup (16 tbs) | |
| Red lentil | 1 Cup (16 tbs) | |
| Green peas | 1 Cup (16 tbs) | |
| Chopped tomato | 1 Large | |
| Chopped onion | 1 Large | |
| Chopped garlic | 3 Clove (15 gm) | |
| Finely chopped ginger | 1 Inch | |
| Green chili | 4 , chopped | |
| Turmeric powder | 1 Teaspoon | |
| Red chili powder | 1 Teaspoon | |
| Garam masala powder | 1⁄2 Teaspoon | |
| Cumin seeds | 1⁄2 Teaspoon | |
| Bay leaf | 3 | |
| Salt | To Taste | |
| Sugar | 1 Teaspoon | |
| Cooking oil | 3 Tablespoon | |
| Ghee | 2 Teaspoon | |
| Water | 6 Cup (96 tbs) |
Directions
1. Wash rice and red lentil and keep in a large strainer to drain out the water.
2. Heat cooking oil in a pressure cooker. Add whole cumin seeds and bay leaf and fry to light brown.
3. Add onion, garlic, ginger, green chili and fry to light brown.
4. Add tomato, chili powder, turmeric powder. Fry in medium heat for 5 minutes. Do not let the spices stick to the bottom of the cooker.
5. Add green peas and cook for another 5 minutes.
6. Add rice and red lentil, sugar and salt. Fry for about five minutes stirring occasionally.
7. Add 6 cups of water. Add ghee and garam masala.
8. Close the pressure cooker lid and cook till one whistle.
9. Remove from heat and release pressure. Keep covered.
10. Serve hot with ghee and omelets or fried fish or potato.
