Shad Roe Aux Fines Herbes Recipe
Ingredients
| Butter | 1/4 Cup (16 tbs) | |
| 2 medium shad roe | ||
| Lemon juice | 2 Teaspoon | |
| Parsley | 1 Tablespoon, chopped | |
| Chives | 2 Teaspoon, chopped | |
| Tarragon | 1 Teaspoon, chopped | |
| Chervil | 1 Teaspoon, chopped | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. In a large, heavy skillet heat the butter and add the shad roe. Sprinkle with salt and pepper. Cook the roe on both sides, turning once carefully, about twelve minutes. When the roe is lightly browned and cooked through, transfer to a hot platter.
