Shad Roe A L Oseille Recipe
Ingredients
| 2 tablespoons sweet butter | ||
| 2 tablespoons finely chopped shallot or green onion | ||
| Sorrel | 1/4 Cup (16 tbs), canned | |
| Dry white wine | 1 Cup (16 tbs) | |
| 3 pairs shad roe | ||
| Salt and white pepper to taste | ||
| Heavy cream | 1 Cup (16 tbs) | |
Directions
1. Grease a skillet with the butter. Place the shallot, sorrel and wine in it and arrange the roe on top. Season with salt and pepper.
2. Cover the pan and bring the mixture to a boil. Reduce the heat and simmer slowly about twenty minutes. Remove the roe to a warm plate and keep warm.
3. Add the cream to the sauce remaining in the skillet, bring to a boil, reduce the heat and cook down to the consistency of a thin white sauce, leaving the skillet uncovered. Adjust the seasonings and spoon the sauce over the roe.
