Ingredients
Mutton-1/2 pound, small pieces
Ghee-3/4 cup
Onion-1 large, chopped
Tomato paste-3 tablespoons
Basmati rice-1 cup, pre-soaked
Meat bouillon -2 1/2 cups
Saffron strands -1 teaspoon
Salt- to taste
Cayenne pepper -1 teaspoon
Whole spices:
Cloves-8
Black peppercorns-8
Bay leaves-2
Brown cardamom pod-1
Green cardamom pods-4
Cinnamon -1 (2 inch) stick
Grind into paste:
Onion-1 small
Garlic-2 cloves
Fresh green ginger -1 (1/2 inch) piece
Salt -1 teaspoon
Plain yogurt-1/3 cup
Directions
GETTING READY
1)Prick the meat pieces with a fork and marinate it in yogurt paste and leave for 2 hours.
MAKING
2)In a pan, heat half ghee and cook meat pieces for 30 minutes on medium heat.
3)Take another saucepan, and heat remaining ghee. Saute onion until golden. Keep aside half for garnishing.
4)Then, add whole spices and stir for 2 minutes. Add meat and tomato puree.
5)Now, add rice and stir for 5 minutes. Slowly add stock, saffron, salt, cayenne and bring to boil.
6)Decrease heat and cook for 10 minutes or until dry and rice is cooked.
SERVING
7)Garnish the biryani with onion and saffron and serve.
