Seviche Recipe
Here is a highly popular Seviche recipe. Seafood is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. The South American Seviche has a way of addicting you to it on the first bite. You need to try this Seviche just once! You'll certainly remain loyal to it forever!

1 cup fresh lime juice
3 tomatoes, peeled, seeded, and chopped
3 scallions, including green parts, finely chopped
1/2 green pepper, seeded and chopped
2 canned jalapeno peppers, finely chopped
2 cloves garlic, finely chopped
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound bay or sea scallops (cut sea scallops into quarters)

Directions
Combine all the ingredients except the scallops and lettuce in a large bowl.
Mix well.
Add the scallops, cover, and refrigerate for several hours.
