Directions
1) In a double boiler, mix the cream of tartar, salt, egg whites, sugar and water together.
2) Beat the mixture for 7 minutes or until firm peaks are formed.
3) Remove from the water and allow to cool.
4) Then stir in the lemon juice.
SERVING
5) Use the icing to spread on a cake.
