2 cups (480 ml) White Jasmine Rice
4 cups (960 ml) water
2 garlic cloves, minced
1 tsp (5 ml) salt
2 tbs (30 ml) olive oil
5 tbs (75 ml) toasted sesame oil
4 tbs (60 ml) rice vinegar
4 tbs (60 ml) soy sauce
1 tsp (5 ml) minced fresh ginger
1 1/2 cups (355 ml) fresh sugar snap peas or snow peas, blanched
1 medium red onion, minced
1/2 cup (120 ml) sliced water chestnuts
1 medium red bell pepper, cored, seeded and diced
2 tbs (30 ml) toasted sesame seeds, optional salt, to taste pepper, to taste
Directions
Cook rice as directed in water with the addition of garlic and salt.
Set aside.
To prepare the dressing, mix the olive oil, sesame oil, rice vinegar, soy sauce and ginger in a bowl.
Toss together in another bowl the peas, onion, water chestnuts and red pepper, then add to the warm rice along with the dressing and the optional sesame seeds.
Toss thoroughly, taste and adjust seasoning.
