Sesame Prawn Toasts Recipe
Ingredients
| 8 oz/225 g peeled prawns, thawed if frozen | ||
| Spring onions | 4 Small, trimmed | |
| Salt | 1/2 Teaspoon | |
| 1 egg, size 5 | ||
| Light soy sauce | 1 Tablespoon | |
| Sesame oil | 1 Teaspoon | |
| White bread slice | 6 , thinly sliced | |
| 1 oz/25 g sesame seeds | ||
| Oil for deep frying | ||
| Spring onion tassels to garnish | ||
Directions
Dry the prawns on kitchen paper.
Cut off the green part from the spring onions and discard.
Place prawns, spring onions and salt in a food processor and blend until thoroughly chopped.
Alternatively, you can do this by using a wooden board and a Chinese cleaver or large kitchen knife.
Add the egg, soy sauce and sesame oil, then blend for 30 secs, or until thoroughly mixed.
Trim off crusts from the bread, then discard.
Cut bread into 3 in x 1 in/ 7.5 cm x 2.5 cm oblongs.
Spread with the prepared prawn mixture and sprinkle generously with sesame seeds.
Heat oil in a wok or deep fat fryer and fry the toasts in batches for 3-5 mins, turning at least once, until golden brown.
Drain on kitchen paper and garnish.
The Prawn Toasts are best eaten immediately after cooking.
