| Peeled prawns - 1 lb 450g , preferably uncooked | ||

| Ginger | 2 Teaspoon | |
| Light soy sauce | 1 Tablespoon | |
| Sesame oil | 1 Teaspoon | |
Directions
GETTING READY
1 Using a sharp knife, chop the prawns coarsely.
2 Mince them finely into a paste.
MAKING
3 In a bowl, put the paste and mix in the remaining ingredients.
4 If the bread is fresh, place it in a warm oven to dry out.
5 Remove the crusts and cut the bread into rectangles about 3inches (7-5cm) x 1 inch (2-5cm).
6 Thickly spread each piece of bread with prawn paste.
7 The paste should form a mound about 1/8 inch (0-3cm) deep.
8 Sprinkle sesame seeds on the toasts.
9 In a deep-fat fryer or wok, heat the oil to a moderate heat.
10 Deep-fry several prawn toasts at a time, paste-side down for about 2-3 minutes.
11 Turn them over and deep-fry for about 2 minutes, or until they are golden brown.
12 Repeat the process until they are all done.
13 Remove using a slotted spoon.
14 Drain well on kitchen paper.

15 Serve hot.
