3 cups cooked rice
 
1 1/2 cups slivered cooked pork
 
1/4 pound fresh snow peas, trimmed and julienned
 
1 medium cucumber, peeled, seeded, and julienned
 
1 medium red bell pepper, julienned
 
1/2 cup sliced green onions
 
2 tablespoons sesame seeds, toasted (optional)
 
1/4 cup chicken broth
 
3 tablespoons rice or white wine vinegar
 
3 tablespoons soy sauce
 
1 tablespoon peanut oil
 
1 teaspoon sesame oil

Directions

Combine rice, pork, snow peas, cucumber, bell pepper, onions, and sesame seeds in large bowl.
Combine broth, vinegar, soy sauce, and oils in small jar with lid; shake well.
Pour over rice mixture; toss lightly.
