Add the garlic and ginger and saute for 30 seconds.
Add the vinegar, honey and tamari sauce.
Bring to a boil and stir constantly for 30 seconds more.
Remove from the heat and transfer to a small container.
Yields 1/2 cup.
Sesame Chicken: Rinse out the pan and return to heat.
Add canola oil.
When the oil is hot, add the chicken breasts and saute gently, about 4 minutes.
Turn the chicken breasts and add the green onions.
Continue to cook for 2 minutes longer and then add the mango.
Continue to cook until the chicken is done.
Toss the mango and the onion during this time until they are cooked through.
Remove from the heat and pour off any excess fat from the pan.
Combine arrowroot with cooled Mango Sweet and Sour Sauce.
Pour the Sauce over the chicken and return to the heat for several minutes.
Remove from the heat and arrange the chicken, mango and onions equally among 4 plates.
Cover each breast with the remaining Sauce, season with pepper and sprinkle with sesame seeds.
