Sesame Broccoli Stir Fry Recipe

Cooking spray
 
1 tablespoon dark sesame oil
 
1 (12.3-ounce) package firm low-fat tofu, drained and cubed
 
4 cups fresh broccoli florets
 
1 1/2 cups diced red bell pepper
 
1/4 cup low-salt soy sauce
 
3 cups hot cooked instant brown rice, cooked without salt and fat
 
1 1/2 tablespoons sesame seeds, toasted

Directions

Coat a wok or large nonstick skillet with cooking spray; add oil, and place over medium-high heat until hot.
Add tofu; stir-fry 5 minutes or until lightly browned.
Remove tofu from wok; set aside, and keep warm.
Add broccoli, bell pepper, and soy sauce to wok; stir-fry 3 minutes or until vegetables are crisp-tender.
Add tofu, and stir-fry 30 seconds or until thoroughly heated.
Spoon 3/4 cup rice onto each of 4 plates; top evenly with broccoli mixture.
Sprinkle evenly with sesame seeds.
