 Creme fraiche1⁄4 Cup (4 tbs)
 Extra virgin olive oil1 Tablespoon
 Snipped chives1 Tablespoon
 Lemon juice1 Teaspoon
 Butterflied shrimp1 Pound
 Pancetta3 Ounce, sliced
 Shallot1 Medium, sliced
 Fresh asparagus1 Pound
 Garlic clove1 , pressed
 Softened butter1 Tablespoon
 Pepper1 Teaspoon, freshly grounded

Directions

GETTING READY
1) In a bowl, add crème fraiche, olive oil, chives, and lemon juice, mix well.

MAKING
2) Put a sauté pan over medium heat. Pour olive oil.
3) Sauté pancetta in oil until it is crisp. Take it out of pan.
4) Sauté asparagus and shallot until it becomes tender.
5) Crumble the pancetta and add in pan.
6) Push aside vegetables and pancetta mixture and add shrimp, cook for 2 minutes.
7) Mix vegetables, pancetta and shrimp together.
8) Add butter and fresh garlic.

SERVING
8) Serve with lemon cream sauce.
