 Pork4 Pound, cut into 2-inch cubes (pork butt or pork shoulder)
 Orange juice3 Cup (48 tbs)
 Adobo2 Cup (32 tbs) (pre made from onions, garlic, vinegar, salt , pepper and spices)
 Red onion1 Large, thinly sliced
 Vinegar3 Cup (48 tbs)
 Orange1 Large, squeezed
 Lime2 Medium, squeezed (1 for the green salsa)
 Serrano pepper3 Large (1 thinly sliced for the red onion salsa 2 roughly chopped for the green salsa)
 Cilantro3 Cup (48 tbs) (1/4 cup finely chopped for the red onion salsa and 1/2 cup for the green salsa)
 Salt2 Teaspoon (1 teaspoon for the green salsa)
 Pepper2 Teaspoon (1 teaspoon for the green salsa)
 Tomatillos8 Medium, quartered (for the green salsa)
 Avocado1 Large (1 for the green salsa and 1/4 thinly sliced for garnish)

1. Pre heat the oven to 350 degrees Farenheit.
2. Marinate the pork in orange juice overnight and keep it refrigerated.

3. Line a large metal baking dish with banana leaves.
4. Place the pork in it.
5. Pour the adobo in it and mix well.
6. Cover with banana leaf and thereafter with foil.
7. Place in the oven and let it cook for 2 hours.

8. In a mixing bowl, place the thinly sliced red onion.
9. Pour the vinegar in it.
10.Squeeze in the juice from 1 orange and 1 lime.
11.Throw one thinly sliced serrano pepper in it.
12.Place 1/4 cup finely chopped cilantro in it.
13.Season with salt and pepper.
14.Toss gently and keep aside in a bowl.

15.In the blender, blend the tomatillos with a little water.
16.Throw in 1/8 of a diced yellow onion.
17.Throw in 2 roughly chopped serrano peppers in it.
18.Add 1/2 a cup of cilantro.
19.Add the flesh from 1 avocado.
20.Squeeze in the juice of 1 lime.
21.Season with salt and pepper.
22.Pulse it to the consistency of a thick paste.
23.Pour in a bowl and keep aside.

24.Lightly toast the tortillas.
25.Take the pork out of the oven.
26.On a platter, place the tortillas.
27.Put the pork on top of it.
28.Top with the red onion salsa,chopped cilantro and sliced avocado.

29.Serve the pork stuffed tortillas with a side of rice and beans along with the red onion and green tomatillo salsa.
