Semiya Upma Recipe
Semiya/Vermicelli Upma is a healthy and easy to make dish. It is a good break-fast dish or can be even had an as evening snack.

Ingredients
Semiya/Vermecelli - 2 cups
Mixed vegetables (carrots, green peas, potatoes, sweet corn, french beans, bell peppers..)- 2 cups chopped
Onion - 1 julienned
Green chillies - 4 slit into halves
water - 2 cups
Salt - to taste
For tempering

Vegetable/Any oil - 2 tbs
Ghee/Clarified butter - 1 tsp
Mustard seeds - 1/4rth tsp
Cumin seeds - 1/2 tsp
Urad Dal - 1/2 tsp
Hing/Asofetida - a pinch
Ginger - 2 inch piece finely chopped
Walnuts/Cashewnuts (optional)- a few
Turmeric - 1 pinch
Curry leaves - a few
Directions
Heat a skillet. Add 1 tsp ghee/clarified butter. Add vermicelli and roast until it turns slightly brown. Remove and keep aside.
In the same skillet, add 2 tbs oil and add mustard seeds. Allow them to splutter, add cumin seeds, urad dal, hing, chopped ginger,nuts (optional), slit green chillies and curry leaves.
Add chopped mixed vegetables, salt and mix well. Add 2 cups of water, cover with lid and cook until veggies turn tender.
Add the roasted vermicelli and an additional cup of water (if required), stir well, cover with lid and continue cooking (stirring in between)until the water has been completely absorbed and the vermicelli is thoroughly cooked.
Serve Hot

Oh yes..you can use ghee instead of oil or vice versa. Since vermicelli has a subtle flavor I strongly suggest not using more than 1.5 tbs of ghee as it could dominate/alternate the flavor. Yes..it is an extremely simple dish to make and is the best way to finish a packet of vermicelli!

Hi.. I have at least a packet of vernicelli lying in my refrigerator every week and think of ways to finish it off, as none of us, both my huby and I are not really fond of it. But after seeing the picture you have put up there, i feel that is should also try making Semiya upma. Also, think it is quite an easy and simple dish to make. Well, i would like to know, if i can substitute the oil with ghee... coz i love dishes prepared in ghee.. Pleas let me know
