 Onion1 Large, thinly sliced
 Garlic1 Clove (5gm), minced
 Oil4 Tablespoon
 Seaweed2/3 Cup (16 tbs), soaked
 Sweet red pepper1 Small, sliced
 Eggplant2 Cup (16 tbs), diced
 Tomatoes2 Large, diced
 Corn1 Cup (16 tbs)
 Pinch of paprika
 Chopped basil1/2 Tablespoon, dried
 Dried oregano1/2 Teaspoon

Directions

MAKING
1) In a heavy saucepan, saute the onion and garlic in oil, stir in all the other ingredients and
simmer covered, for about 30 min, or until the eggplant pices are tender.

SERVING
2) Serve on a nice dish.
