Seasoned Racks Of Lamb With Glazed Mint Sauce Recipe
The seasoned racks of lambs glazed with mint sauce is a savory and herb flavored recipe that ic prepared in the oven. The lamb racks are stuffed with a seasoning mix of cooked rice, shalots garlic, parsley and chives. Brushed with a seasoned egg and mint sauce or glaze, the seasoned racks of lamb can be served with mashed potatoes and salad. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
| Lamb rack | 2 (4 Chops Per Rack) | |
| Cooked long grain rice | 1 1⁄2 Cup (24 tbs) | |
| Shallots | 2 , chopped | |
| Garlic | 1 Clove (5 gm), crushed | |
| Chopped parsley | 1 Tablespoon | |
| Chopped chives | 1 Tablespoon | |
| Egg | 1 , beaten | |
| Salt | To Taste | |
| Pepper | To Taste | |
| Glazed mint sauce | 1 Teaspoon |
Directions
1.
Using a sharp knife separate meat from bone, forming a pocket but leaving ends intact.
2.
Mix all other ingredients in a bowl, to make well-combined seasoning.
Firmly pack a little seasoning between meat and bones.
3.
Place racks on pizza tray, facing each other, interlocking bones to form an arch.
4.
Place seasoning in arch, packing firmly, brush with glaze.
5.
Place on Low Rack.
Cook on HIGH MIX/ROAST 180°C for 20 minutes (medium) or 25-28 minutes (well done).
6.
Serve chops accompanied by seasoning and glazed mint sauce.
