2 pouinds boneless pork shoulder
 
4 ounces salt pork
 
2/3 cup water
 
1/3 cup finely chopped onion
 
2 tablespoons finely snipped parsley
 
4 teaspoons rubbed sage
 
1 teaspoon salt
 
1 teaspoon dried green pepper flakes
 
1 teaspoon chili powder
 
1/2 teaspoon dried thyme, crushed
 
1/2 teaspoon dried marjoram, crushed
 
1/2 teaspoon dried basil, crushed
 
2 cloves garlic, minced

Directions

Using coarse blade on food grinder, grind pork shoulder and salt pork together.
Combine the ground meat, water, onion, parsley, sage, salt, pepper flakes, chili powder, thyme, marjoram, basil, and garlic; mix very well.
Grind again.
Chill at least 2 hours.
Form into patties 2 1/2 x 1/2-inch.
Preheat Meal Browner browning dish at HIGH for 6 minutes.
Place 6 patties in browning dish.
Cook, covered, at HIGH for 3 minutes.
Turn patties.
Cook, covered, at HIGH for 3 minutes or till done.
Repeat with remaining patties, preheating browning dish for 3 minutes at HIGH between batches.
Or refrigerate remaining pat ties and use another time.
